Scallops With Pimiento
Vieiras Con Pimiento
Ingredients
2 red bell peppers (capsicums), roasted, seeded and cut into strips
2 tablespoons extra virgin olive oil
2 tablespoons red wine vinegar
24 scallops on the half shell
24 teaspoons dry white wine
Coarsely ground black pepper
2 tablespoons freshly grated Parmesan cheese
Lemon or lime wedges

Serves: 8
Method
1.Marinate the bell pepper strips in the olive oil and vinegar for at least 30 minutes. Crisscross two or more strips over each scallop and drizzle with a teaspoon of wine. Grind a little black pepper over each scallop and sprinkle with a little Parmesan cheese.
2.Broil the scallops under a preheated broiler (grill) for 4 to 5 minutes, taking care not to overcook them. Serve with lemon or lime wedges.
