Potato Salad With Capers And Mint

Ingredients

5 medium size potatoes
1 large onion, roughly sliced
1 tbsp capers
1 tsp mint, finely chopped
5-6 black olives, salted
½ cup extra virgin olive oil
Salt
Black pepper, freshly ground
2 tbsp vinegar, from red wine

Serves: 6


Method

1. Wash the potatoes under running water and boil them in ample water for 30 minutes. Do not clean them first. Let them cool off first, then peel and cut in fairly large pieces.


2. Place the potato pieces in a large bowl and add in the onion, capers, mint, a little salt, and stir well with two spoons. Pick a glass jar and pour in the olive oil, vinegar, a little salt and two drops of tepid water. Seal the jar well and shake the mixture well to mix all ingredients.


3. Pour the mixture over the potato salad, sprinkle with a little pepper and serve.
